Ingredients
Makes 4 burgers
400g pork mince
1 tsp salt
1 tbs black pepper
2 tsp mild / sweet paprika
1 tsp smoked paprika
1 tbs fennel seeds
1 tsp cayenne pepper
1 tbs minced garlic
Cajun Pork Burgers
These are an outstanding alternative to your old fashioned beef burger. Made with plenty of pig and loaded up with southern spices, what more could you ask for? I always try to use slightly more expensive "happy pig" type pork as it has a better texture and flavour to the cheap stuff. Plus pigs should be happy.
Method
Mix all of the spices and garlic up together in a bowl and then add the pork. Very gently mix the pork in with the spices, don't be too rough or you'll ruin the texture of your burgers. When fully combined, split into 4 and make into patties.
Cook on a medium hot griddle pan or BBQ for about 3 and a half mins each side until cooked but still juicy. Obviously cooking times depend on the thickness of your pigslab. Always be a bit more careful with pork than you would beef and make sure they are cooked before serving.
Serve however the mood takes you.
To add a little extra zing, add a grated onion into the mixture.
