Ingredients
Makes one tub
35g coriander, chopped
10g flat-leaf parsley, chopped
3 hot green chillies, chopped
1 garlic clove, crushed
2 tbs water
2 tbs olive oil
½ tsp ground cumin
½ tsp ground cardamom
¼ tsp ground cloves
¼ tsp caster sugar
¼ tsp salt
Zhoug
So what is Zhoug? OK, try to imagine a pesto on steroids. It's a green mash of hot, herby, spicy goodness which is very popular in Israel and now Cornwall.
Being versitile, it is great with salads, on pittas, with falafel - you name it Zhoug is your fellow. It shouldn't be too finely blizted but quite coarse. And it is supposed to be seriously hot!
Method
Simply drop all your ingredients into a food processor or blender and pulse it a few times to get a lovely coarse paste. This will then keep in the fridge for about a month. Simple.
