Ingredients

Makes plenty


1kg marrow, peeled, seeded and chopped
2 Bramley apples, peeled, cored and chopped
200g sultanas
450g dark brown sugar
375ml malt vinegar
2 red onions, finely chopped
2 garlic cloves, finely chopped
2 tbs grated ginger
1 tsp crushed hot chilli flakes
1 tbs Dijon mustard


 



 

 

Marrow Chutney

 

You there! Do you have a glut of marrows?  Do passers by shake their head and make tutting sounds at the sight of rotting vegetables in your garden?

 

If this is the case then what you need is this marrow chutney recipe! Guaranteed to cure what ails you and relieve you of your voluptuous cucurbitas!
 

Method

Place your marrow in layers in a bowl, salting each layer as you go.  Cover the bowl and leave to rest over night.  When you awake next morning you will be astonished at the amount of water which has been drawn out.

 

Drain and rinse your marrow then place it into your pot.  Add all the other ingredients, give it a good stir and bring to the boil.

 

Lower the heat and simmer, very gently, for another couple of hours until it has reduced greatly.

 

Place the chutney in sterilised jars where it will keep for many a month.  Great with strong cheese, papads and all manner of cold meats. Or chips.  Chips are nice.
