100g plain flour

250g caster sugar

100g unsalted butter

200g dark chocolate pieces

30g cocoa powder

80g dried cranberries

1 tsp baking powder

4 medium eggs


 



 

 

Chocolate Cranberry Brownies

 

Provided by my adoring wife - thanks honey, this recipe is a shameless crowd-pleaser!  These brownies will win you the love of your family and be the envy of your friends.  They will also increase your chance of winning the lottery and will help to retard global warming. Possibly.

 

So easy to make that even I can do it. Seems to be a lot of "fold this" and "mix that", but I managed it.  Go me.  What have you got to lose? Nothing, that's what.  Now get baking!

 

Method

Put the butter and chocolate into a bowl and gently melt in a microwave, removing to stir occasionally.  When done, put to one side to cool slightly.

 

Whisk the eggs and sugar together until they are pale and the whisk leaves a trail when you lift it out, then fold the chocolate mix into the eggs and sugar.

 

When combined, sift the baking powder, flour and cocoa together into the mixture and gently fold in.  Finally, fold in the cranberries.

 

Pour this mixture into a lined baking tin and then place in a preheated oven at 180c for 30 minutes.

 

When done leave it to cool in the tin, before removing and slicing into whatever portions take your fancy.  Or just going at the whole lot with a spoon. Either way, feel free to dust with icing sugar first.
