Ingredients
Serves 4
500g beef mince
4 pork sausages
1 onion, diced
2 carrots, diced
150g Chestnut mushrooms, diced
2 tsp dried oregano
1 tsp dried thyme
1 tsp black pepper
1 tsp salt
½ tsp dried dill
1 tsp crushed fennel seeds
1 egg, beaten

Well lookee here we got us the Outlaw Jose Wales! Sorry, not sure why I typed that.. I think it's because this is another American dish and I was trying to sound cool and Stateside. I'm not convinced it worked. Anyway, meatloaf. A rather lovely blend of spices combined with sausage and beefand baked in the oven. Very versatile and very easy to cook. Give it a go.
Method
Gently fry the onions for 5 minutes in some olive oil before adding the carrots. After another 5 minutes, add the mushrooms and then fry for a further 5 minutes. Remove from pan and leave to cool.
Remove the sausages from their skins and mix together with the beef mince and the cooled onion, carrot and mushroom mixture. Sprinkle the spice mixture on top and add the beaten egg and work the mixture together until it has a soft, sausage meat like consistency.
Grease a loaf tin (or use a silicon one) and put your mixture in it, pressing down tightly to avoid any air bubbles. Place this in an oven at 150C for about an hour. Leave to cool and then slice.
You can have this hot with roast potatoes and gravy or cold with some pickles and relishes. Hey you made it, have it however you like! If you shallow fry the slices before serving you get a wonderful contrasting texture, crispy on the outside and soft on the inside.
